Mature Vinegar
Mature vinegar is the class of Chinese aged cereal vinegar made by solid state fermentation of grain and then held for an extended maturation, the best known example being the dark vinegar of Shanxi. It is distinguished from Western vinegars in three ways: the substrate is whole grain rather than fruit or dilute alcohol, the fermentation is carried out in a semi-solid grain and bran mash rather than in a liquid, and the finished vinegar is aged for a year or more, sometimes far longer.
The result is a very dark brown to black, viscous liquid with a smoky, malty, faintly caramel aroma and a complex sourness quite unlike acetic acid alone. Total acidity is typically at or above 6 grams per 100 millilitres, higher than table vinegar, and the acidity is carried by lactic, succinic and other organic acids as well as by acetic acid, which is what makes the sourness rounder and less sharp. Amino acids and melanoidins from the long fermentation and the ageing contribute umami and colour.
The liquid is fully miscible with water and has a pH generally between 3.2 and 4.0. Ageing concentrates it, since water is lost across the year, and this is deliberate: the traditional method of exposing jars to summer sun and lifting ice off in winter removes water and raises both acidity and body.

Common Markets Grades
Age is the primary trading parameter. A product may be described as mature vinegar only after a defined minimum ageing period, commonly one year for the base grade, with three, five, eight and ten year designations sold at rising prices. Total acidity is the second parameter, generally 6 grams per 100 millilitres and above for the aged article, with older grades running considerably higher because ageing concentrates the vinegar.
Beyond age and acidity, offers differ on whether the vinegar carries a protected geographical designation, on the grain bill used, and on the non-volatile acid and amino acid nitrogen content, which are the analytical markers of a genuinely long solid state fermentation rather than a blended or shortcut product. Colour and viscosity are specified for use in sauces and glazes. Simple blended vinegars coloured with caramel and sold in the same style are a distinct and cheaper article, and the two are not interchangeable in cooking.

Regulatory Status
Mature vinegar is a food rather than a food additive, so it is used and labelled by name and carries no E number. In the European Union vinegar is governed by general food law and national compositional provisions, and imported Chinese vinegars are handled under those rules together with the usual contaminant and hygiene requirements. In the United States the Food and Drug Administration has no standard of identity for vinegar but sets out its labelling expectations in a compliance policy guide, requiring a minimum acetic acid content and a name that reflects the substrate, so a grain based product must be described accordingly rather than as cider or wine vinegar.
Codex Alimentarius addresses vinegar in a regional standard that sets minimum acetic acid content and defines the permitted raw materials, and production falls under the general Codex codes of hygienic practice. Within China the principal aged vinegars hold protected geographical indication status, which reserves the regional name for vinegar produced in the defined area by the traditional solid state method and aged for the stated minimum period, and that designation is the working quality reference in international trade. Where caramel colour has been added rather than developed during processing it must be declared as an additive.
Manufacturing Process
Production is a multi stage solid state process. The grain bill, typically sorghum with barley, wheat bran and peas, is milled, steamed and cooled. A starter culture known as qu, a brick or powder of grain colonised with Aspergillus, Rhizopus and yeast, is mixed in. The moulds in the qu saccharify the starch to fermentable sugars while yeast converts those sugars to ethanol, both happening together in the same mash over several days.
Bran and rice husk are then mixed into the alcoholic mash to open its structure and admit air, and the mash is heaped for acetous fermentation. Acetic acid bacteria growing through the porous solid oxidise the ethanol, and the heap is turned by hand or machine each day to control temperature and oxygen. This stage runs for one to two weeks and reaches high acidity.
The fermented mash then passes through the step that gives the vinegar its character. Part of the mash is smoked or heated slowly over several days, driving Maillard and caramelisation reactions that produce the dark colour and the smoky aroma. The smoked and unsmoked portions are recombined, and the vinegar is leached out of the solid with water in a counter-current wash. The raw vinegar is finally aged in jars or tanks for a year or more, traditionally outdoors so that summer evaporation and winter ice removal concentrate it. The aged vinegar is clarified, standardised and pasteurised before filling.
