Brown Maltodextrin
Brown Maltodextrin is a thermally treated maltodextrin in which controlled caramelization develops a warm tan to deep brown colour and a mild roasted-malt aroma.
It retains the carbohydrate backbone of standard maltodextrin (DE typically 10 to 18) while gaining the visual cues and flavour depth of a partial Maillard browning step.
The powder dissolves cleanly in water to give amber liquids and is used where formulators want maltodextrin functionality together with an inherent caramel tone, without adding separate caramel colour.

Common Markets Grades
Brown Maltodextrin grades are differentiated by colour intensity, DE, and aroma profile.
Light tan grades (EBC colour 50 to 100) carry mild toasted notes and are favored in pale beverage bases, dairy drinks, and bakery glazes where a soft warm tone is enough.
Medium brown grades (EBC 100 to 250) deliver a recognizable caramel hue and gentle malt flavour, fitting confectionery centres, cereal bars, and sauces.
Dark brown grades (EBC 250 and above) approach the colour depth of caramel powder and are used in cola-type beverages, savory broths, gravies, and coffee creamer blends.
Both corn-source and tapioca-source brown maltodextrin are produced. Tapioca-source variants serve gluten-free and clean-label briefs.

Regulatory Status
Brown Maltodextrin is treated as a starch derivative in most jurisdictions and does not carry an additive E number when produced by thermal treatment alone without ammonium or sulphite assistants.
The U.S. FDA accepts it as a food ingredient under the GRAS framework that covers maltodextrin and food caramel components.
Where ammonium-assisted browning is used, the product crosses into the caramel-colour category and must be declared accordingly.
Kosher and Halal certification is routinely available. Non-GMO and organic variants are produced from identity-preserved corn and tapioca streams.
Manufacturing Process
Brown Maltodextrin is produced by taking a standard maltodextrin stream and applying a controlled thermal treatment under reduced moisture.
The maltodextrin syrup or wet powder is heated in a continuous reactor where temperature, residence time, and pH are tuned to drive partial Maillard and caramelization reactions without bitter pyrazine development.
The browned mass is then dried, milled, and sieved to a free-flowing powder.
Colour is measured in EBC or ICUMSA units against an in-house standard curve, and lots are blended to a target colour and aroma specification.
