Calcium Caseinate
Calcium Caseinate is the calcium salt of casein, the principal phosphoprotein family of bovine milk (CAS 9005-43-0). It is produced by neutralising acid-precipitated casein curd with calcium hydroxide to form a stable, water-dispersible protein ingredient with around 90 percent protein content on a dry basis.
The ingredient is used for its slow-digesting amino acid release, smooth functional behaviour in dairy and bakery systems, and contribution of bioavailable calcium and protein to nutritional formulations.

Regulatory Status
Calcium Caseinate is approved as a food and pharmaceutical ingredient in all major regulated markets.
In the European Union it is regulated under Directive 2015/2203/EU on caseins and caseinates intended for human consumption, which sets compositional, hygiene, and labelling standards. The U.S. Food and Drug Administration affirms it as GRAS under 21 CFR 184.1230 for direct food use as a nutritional and functional ingredient.
Codex Alimentarius Standard 290-1995 establishes international compositional specifications for edible caseins and caseinates, including Calcium Caseinate. Pharmacopoeial monographs appear in selected national pharmacopeias for use as a pharmaceutical excipient.
Calcium Caseinate is a milk-derived ingredient and must be declared as a major allergen under labelling regulations in the EU, US, Canada, and most other jurisdictions. Halal and Kosher certifications (dairy classification) are widely available.
Manufacturing Process
Calcium Caseinate is produced from acid casein curd in a multi-step process.
Pasteurised skim milk is acidified to approximately pH 4.6, the isoelectric point of casein, by addition of food-grade hydrochloric acid, sulphuric acid, or lactic acid (or by lactic fermentation). The casein flocculates as a coarse curd and is separated from the whey by decantation and centrifugation.
The curd is washed thoroughly with warm water to remove residual whey proteins, lactose, and minerals. It is then resuspended in water and neutralised with food-grade calcium hydroxide slurry to a pH near 6.7 to 7.0, dissolving the casein into a viscous protein solution.
The neutralised solution is preheated, homogenised, and spray-dried to yield the finished powder. Agglomeration in a fluidized bed produces instant grades. Strict process hygiene, heat treatment, and final powder testing meet dairy ingredient cGMP standards for microbial and compositional specifications.
