Cinnamon Bark Oil
Cinnamon Bark Oil is the steam-distilled volatile oil obtained from the dried inner bark of Cinnamomum cassia or Cinnamomum verum, valued for the warm, sweet, and pungent aromatic profile that defines cinnamon flavour.
The composition is dominated by trans-cinnamaldehyde, typically 60 to 80 percent, with secondary contributions from eugenol, cinnamyl acetate, linalool, and beta-caryophyllene.
The oil is a pale yellow to deep amber mobile liquid that darkens on exposure to light and air through oxidative polymerisation of cinnamaldehyde.

Cinnamon Bark Oil is graded by botanical source and by cinnamaldehyde assay.
The standard flavour grade is a cassia-source oil at 75 to 85 percent total cinnamaldehyde measured by GC. This grade serves the bulk of beverage, confectionery, and bakery flavour work.
Ceylon cinnamon bark oil is a separate specification, distinguished by a higher eugenol component (5 to 12 percent) and a softer, less pungent profile. It commands a premium and is preferred in fine fragrance and high-end culinary use.
A rectified or redistilled grade brings cinnamaldehyde above 90 percent for technical applications where a cleaner top note is required.
Food-grade oils meet FCC and Ph. Eur. specifications. A cosmetic grade meeting ISO 3524 (cassia) or ISO 3216 (Ceylon) is produced for personal care.
Bulk packaging is typically epoxy-lined steel drums under nitrogen blanket. Smaller volumes ship in amber glass with PTFE-lined closures.

Regulatory Status
Cinnamon Bark Oil is recognised as a flavouring substance in all major jurisdictions.
In the European Union it appears on the Union list of flavourings that Regulation (EC) No 1334/2008 established. Coumarin and methyleugenol are subject to the same Annex III maximum levels that apply across cassia-derived inputs.
In the United States the oil is generally recognized as safe under 21 CFR 182.20 for flavouring use. The Flavour and Extract Manufacturers Association (FEMA) lists cassia bark oil as FEMA 2258 and Ceylon cinnamon bark oil as FEMA 2291.
The European Pharmacopoeia carries a monograph for Cinnamomi cassiae aetheroleum. ISO standards 3524 and 3216 set composition windows for cassia and Ceylon bark oils respectively.
IFRA imposes use-level restrictions on cinnamaldehyde and methyleugenol in leave-on cosmetic categories due to dermal sensitization potential.
Organic, Kosher, and Halal certifications exist from contracted distillers in Vietnam and Sri Lanka.
Manufacturing Process
The dried inner bark, separated from the outer cork and trimmed to specification, is the starting material. Cassia bark from southern China and Vietnam dominates global volume.
Bark is coarsely milled and loaded into stainless-steel stills. Direct steam is injected through the charge for 6 to 18 hours depending on still geometry and grade target. Cinnamaldehyde is liberated almost entirely during the early phase of the run, while heavier sesquiterpenes come over late.
The vapor stream is condensed in shell-and-tube exchangers and the oil decanted from the aromatic water in a Florentine flask. The aromatic water itself is sometimes cohobated and returned to the still to recover dissolved oxygenates.
Crude oil is dried over anhydrous sodium sulphate, filtered, and either drummed as is or fractionally distilled under vacuum to lift cinnamaldehyde above 90 percent for the rectified grade.
Some producers cold-press leaf and twig material to yield a related but distinct cinnamon leaf oil, which is dominated by eugenol and is not interchangeable with bark oil in flavour work.
