Coconut Water
Coconut water is the clear liquid endosperm held inside the cavity of the coconut, drawn mainly from young green nuts of Cocos nucifera and sold as a drink in its own right and as a beverage base.
It is a dilute solution rather than an emulsion, containing roughly 94 percent water and 4 to 6 Brix of soluble solids made up of glucose, fructose and sucrose, with free amino acids, small amounts of protein and almost no fat. Its defining compositional feature is the mineral profile, dominated by potassium at around 200 to 250 milligrams per 100 millilitres, with magnesium, sodium and phosphorus present at lower levels, which is the basis of its positioning as a rehydration drink. Natural pH sits between 4.7 and 5.4, high enough that the product falls outside the acid food range and needs a full thermal or high pressure treatment rather than simple pasteurisation.
Fresh water from the nut is clear and slightly sweet. The main stability problems are enzymatic, since polyphenol oxidase and peroxidase carried over from the nut cause the pink discolouration familiar in bottled products, and the sugars make it a good growth medium if the aseptic chain is broken.

Common Markets Grades
Trade splits by maturity and by process. Young nut water, tapped from nuts at seven to nine months, is the sweeter and more delicate grade used for drinking products. Mature nut water, a by product of copra and desiccated coconut lines, is more acidic and more saline in character and is generally directed to fermentation, vinegar or nata de coco production rather than to beverage.
Process grades cover chilled fresh water with a short shelf life, thermally treated aseptic water in bag in box or drum for ambient distribution, high pressure processed water sold chilled where a fresher flavour is required, frozen single strength water in drums, and concentrate at around 40 to 60 Brix for dilution at the filling site. Some concentrate is sold aroma restored. Not from concentrate declarations, organic certification and no added sugar statements are the commercial distinctions buyers specify alongside Brix and pH.

Regulatory Status
Coconut water is a food, not an additive, and carries no E number. In the United States the Federal Food, Drug, and Cosmetic Act regulates it as a beverage, and packaged coconut water falls within the juice regulation at 21 CFR Part 120, which requires a hazard analysis and critical control point plan with a validated pathogen reduction step. Its natural pH above 4.6 means that shelf stable product is either processed as a low acid aseptic beverage under the thermally processed low acid food rules or acidified and handled under the acidified food rules. Nutrient content claims relating to potassium follow the general labelling regulations.
In the European Union coconut water is covered by the general food law and hygiene regulations rather than by the fruit juice directive, which does not list coconut among the fruits it defines. Any added sugar, acid or vitamin has to be permitted for the beverage category and declared. Codex has a regional standard for coconut water and coconut products setting compositional and quality requirements. Coconut is treated as a tree nut for allergen labelling purposes in the United States, which is a labelling consideration rather than a compositional one.
Manufacturing Process
Green nuts are received, dehusked and washed, then opened under sanitary conditions so that the water drains without contact with the husk surface. Because polyphenol oxidase activity starts as soon as the cavity is opened, the drained water is chilled immediately and pooled in a jacketed tank. It is coarse filtered to remove shell fragments and endosperm particles, then clarified by centrifugation and fine or membrane filtration, which also removes part of the enzyme load.
The clarified water is deaerated to strip dissolved oxygen, then stabilised. The most common route is ultra high temperature treatment in a tubular or plate steriliser followed by aseptic filling, which gives an ambient shelf life at the cost of some cooked note. High pressure processing is used instead where a fresher flavour matters, treating the product in its final pack at around 600 megapascals for a few minutes. Concentrate is produced by vacuum evaporation or by reverse osmosis and membrane concentration at low temperature, with the aroma fraction recovered separately and added back. Acidification with a permitted acid is sometimes applied to bring the pH below 4.6 and reduce the severity of the heat process.
