Crystalline Maltitol is the high-purity solid form of maltitol, the hydrogenated disaccharide alcohol of maltose, produced for applications that require dry handling, low moisture, and sucrose-like crystallisation behaviour.

The molecule is 4-O-alpha-D-glucopyranosyl-D-sorbitol with formula C₁₂H₂₄O₁₁ and CAS 585-88-6. The crystalline grade is specified at 98 percent minimum maltitol on a dry basis and is functionally distinct from the maltitol syrup grade, which is a polyol-blend liquid.

Regulatory Status

Crystalline Maltitol carries the same regulatory status as maltitol in all major markets.

In the European Union it is identified as E965(i), the crystalline form of E965 maltitol. EU labelling requires the statement excessive consumption may produce laxative effects when a serving delivers more than 10 grams of polyol.

The U.S. Food and Drug Administration treats maltitol as GRAS for use as a nutritive sweetener and bulking agent. The agency has accepted a labelling caloric value of 2.1 kcal per gram.

JECFA has evaluated maltitol as safe for food use. Pharmacopoeial monographs appear in USP-NF, Ph. Eur., JP, and BP.

The substance is Halal and Kosher certifiable and is not a recognised food allergen.

Manufacturing Process

Crystalline Maltitol is manufactured in a multi-step process that begins with a high-purity maltose syrup.

Starch from corn, wheat, or tapioca is liquefied with thermostable alpha-amylase and saccharified with beta-amylase and pullulanase to yield a syrup with maltose content above 90 percent on dry solids. Selective fractionation and chromatographic enrichment can lift maltose above 95 percent for the highest-purity targets.

The enriched maltose syrup is hydrogenated under hydrogen pressure of 40 to 150 bar at 100 to 140 degrees Celsius over a Raney nickel or supported nickel catalyst. The reducing glucose terminus of each maltose molecule is converted to a sorbitol unit, producing maltitol with minor byproducts of sorbitol and hydrogenated higher saccharides.

The hydrogenated solution is filtered to remove catalyst, demineralized through ion-exchange resins, and decolorised on activated carbon to yield a clear concentrated solution above 70 percent solids.

Crystallisation is the step that distinguishes the crystalline grade from the syrup grade. The concentrated solution is fed to flat-bed or batch crystallisers, seeded with maltitol crystals, and cooled under controlled profile to grow uniform crystals at high yield. The cake is centrifuged, washed, dried, and milled to the target granulation.
