Maltitol Syrup
Maltitol Syrup is a hydrogenated glucose syrup composed primarily of maltitol with sorbitol and higher hydrogenated saccharides, sold as a clear viscous non-crystallising liquid for sugar-free confectionery, chewing gum, and bakery applications.
A typical specification covers 50 to 75 percent maltitol on a dry basis with the balance as sorbitol, maltotriitol, and higher polyols. The product carries CAS 585-88-6 for its principal maltitol component and total solids of about 75 percent.

Maltitol Syrup is graded in three composition tiers.
High-maltitol syrup at 70 to 75 percent maltitol on dry basis is the standard grade for sugar-free chewing gum, chocolate, and reduced-calorie baked goods.
Intermediate-maltitol syrup at 50 to 60 percent maltitol on dry basis offers a more economical bulk sweetener with strong anti-crystallisation properties, well suited to soft caramels, fondants, and bakery fillings.
Low-maltitol or maltitol-sorbitol syrup at 30 to 50 percent maltitol on dry basis is used as a humectant and texture modifier in dietetic spreads, jellies, and dairy desserts.
All grades meet FCC and JECFA specifications for hydrogenated starch hydrolysates. Pharmaceutical grades comply with USP-NF and Ph. Eur. monographs for maltitol solution.

Regulatory Status
Maltitol Syrup carries broad regulatory approval as a food additive.
In the European Union it is identified as E965(ii), the syrup form of E965 maltitol. EU labelling requires the statement excessive consumption may produce laxative effects when a serving delivers more than 10 grams of polyol.
The U.S. Food and Drug Administration treats maltitol syrup as GRAS for use as a nutritive sweetener, bulking agent, and humectant. The substance is also covered by the broader hydrogenated starch hydrolysate GRAS framework.
JECFA has evaluated maltitol syrup as safe for food use and assigned no numerical specification limit. The agency has accepted a typical labelling caloric value of 3.0 kcal per gram, reflecting the contribution of sorbitol and the hydrogenated oligomer fraction.
The substance is Halal and Kosher certifiable and is not a recognised food allergen.
Manufacturing Process
Maltitol Syrup is produced by the catalytic hydrogenation of a high-maltose glucose syrup.
The starting material is a refined glucose syrup processed from starch (corn, wheat, or tapioca) using alpha-amylase liquefaction followed by saccharification with beta-amylase, pullulanase, and other debranching enzymes. The saccharide profile is tuned to deliver the target maltose-to-higher-saccharide ratio for the finished syrup grade.
The maltose-rich syrup is hydrogenated under hydrogen pressure of 40 to 150 bar at 100 to 140 degrees Celsius over a Raney nickel or supported nickel catalyst. All reducing ends are converted to polyol groups, converting glucose to sorbitol, maltose to maltitol, maltotriose to maltotriitol, and so on through the higher oligomers.
The hydrogenated solution is filtered to remove residual nickel, demineralized through ion-exchange resins, and decolorised on activated carbon. Vacuum evaporation concentrates the syrup to about 75 percent total solids, the standard supply specification.
Because the product is a deliberate blend of polyols, no crystallisation step is applied. The mixed composition is the property that prevents recrystallisation in finished goods and is the functional reason the syrup form is selected.
