Dipotassium Phosphate

Dipotassium Phosphate is the dibasic potassium salt of orthophosphoric acid, with formula K₂HPO₄ and the trade abbreviation DKP.

It is a mildly alkaline, highly soluble white powder used as a buffer, an emulsifying salt in processed dairy, a non-dairy creamer stabiliser, and a source of potassium and phosphate in clinical nutrition.

Common Markets Grades

DKP comes in anhydrous and trihydrate forms.

The anhydrous grade is the standard for dry-blend applications. It is hygroscopic and is usually packed in moisture-barrier liners. Food-grade material meets the FCC monograph at 98 percent minimum assay.

The trihydrate grade (K₂HPO₄·3H₂O) is preferred where a more free-flowing crystal is required and where direct dissolution into liquid systems is the norm. It also serves as the reference form in several pharmacopoeial monographs.

USP and Ph. Eur. grades reach 99 percent and above with tight controls on chloride, sulphate, and heavy metals. These tighter grades are used in parenteral nutrition concentrates, dialysis solutions, and as a phosphate source in cell-culture media.

Regulatory Status

DKP carries the EU food additive number E340(ii), and Regulation (EC) No 1333/2008 permits it across many food categories.

In the United States it is Generally Recognized as Safe under 21 CFR 182.1613 for general food use and 21 CFR 182.6285 for use as a sequestrant. It also appears in 21 CFR 184.1631 for non-dairy creamer applications.

JECFA evaluates the potassium phosphate group together with sodium and calcium phosphates under a combined health-based guidance value for total phosphate intake.

The salt has monographs in the United States Pharmacopeia, the European Pharmacopoeia, and the Japanese Pharmacopoeia, all of which set limits on arsenic, fluoride, and heavy metals.

Kosher and Halal certifications are routinely issued because the production chain uses only mineral feedstocks.

Manufacturing Process

DKP is produced by neutralising food-grade phosphoric acid with potassium hydroxide at a 1:2 acid-to-base molar ratio.

The exothermic reaction is controlled by metering KOH into a phosphoric acid charge held near 80 °C. The end point is verified by potentiometric titration to ensure the dibasic stoichiometry is met without overshooting toward the tribasic salt.

The clarified liquor is concentrated under vacuum and then either spray-dried to yield the anhydrous powder or cooled and crystallised to recover the trihydrate. Drying conditions determine the final crystal water content, and final products are screened, milled, and packed under controlled humidity.

Production is concentrated in China, with additional capacity in Belgium (Prayon), the United States (Innophos), Germany (BK Giulini / ICL), and Israel.
