High Fructose Corn Syrup
High Fructose Corn Syrup (HFCS) is a liquid sweetener produced by enzymatic isomerisation of glucose syrup derived from corn (maize) starch. A portion of the glucose is converted to fructose, giving a mixed-sugar liquor that approximates or exceeds the sweetness of sucrose.
The two dominant commercial grades are HFCS-42 (about 42 percent fructose, 53 percent glucose) and HFCS-55 (about 55 percent fructose, 41 percent glucose). HFCS-55 is the historical standard for U.S. carbonated soft drinks, while HFCS-42 covers most baking, dairy, condiment, and canned-food applications.

Common Markets Grades
HFCS is graded by fructose content on a dry-substance basis.
HFCS-42 contains 42 percent fructose and is the workhorse grade for general food manufacturing. HFCS-55 contains 55 percent fructose and is sweeter than sucrose, the standard for cola-type and citrus carbonated beverages.
HFCS-90, with about 88 to 90 percent fructose, is an intermediate stream produced by chromatographic enrichment. It is rarely sold directly to end users and is mainly blended back with HFCS-42 to produce HFCS-55.
All HFCS grades are shipped at 76 to 80 percent dry solids in heated tankers, totes, or railcars to keep fructose in solution and prevent colour drift. The product is decolorised with activated carbon and demineralized through mixed-bed ion exchange to give a near-water-white liquor with low hydroxymethylfurfural.

Regulatory Status
HFCS is recognised as GRAS by the U.S. Food and Drug Administration under 21 CFR 184.1866, which defines fructose-containing corn syrups by composition.
The European Union regulates the equivalent product under the name isoglucose, governed historically by sugar-sector production quotas under the common agricultural policy and now by general sugar legislation. There is no E number, as isoglucose is treated as a food rather than an additive.
JECFA has not established a numerical intake limit. Halal, kosher, and vegan certification is available for the substance, with non-GMO and identity-preserved options from a subset of producers.
Public-health debate around HFCS has centred on possible associations with obesity, non-alcoholic fatty liver disease (NAFLD), and metabolic syndrome. The U.S. FDA and USDA position is that HFCS is nutritionally equivalent to sucrose at equal sweetness, while the academic literature is mixed and most authorities recommend evaluating it within overall added-sugar intake rather than as a uniquely problematic ingredient.
Manufacturing Process
HFCS production begins with refined corn starch slurry.
The slurry is gelatinized in a jet cooker and liquefied with thermostable alpha-amylase to give short-chain dextrins. The liquor is then saccharified with glucoamylase to yield a dextrose stream at 95 percent or higher glucose, which is decolorised and demineralized to feed the isomerisation step.
The dextrose feed is passed through fixed-bed reactors packed with immobilized glucose isomerase, normally a thermostable bacterial enzyme bound to a porous carrier. The reactor outlet contains an equilibrium mixture of glucose and fructose at roughly 42 percent fructose, the basis of HFCS-42.
For HFCS-55, a portion of the 42 percent stream is enriched on simulated moving-bed chromatography columns operated in calcium-form cation exchange. The resulting 90 percent fructose stream is blended back with HFCS-42 to give the 55 percent target. All grades are polished, evaporated to 76 to 80 percent dry solids, and shipped warm.
