Manufacturing Process

Production starts with washed fish skin recovered from filleting operations, with optional scale and frame addition for specific projects. The skin is demineralized with dilute acid to dissolve residual calcium phosphate.

Conditioned skin is extracted with clean hot water at 45 to 70 degrees Celsius, depending on species, to release fish gelatin. Food-grade alkaline or neutral bacterial proteases then cleave the gelatin into peptides of the target molecular-weight band.

The solution is decolorised with activated carbon, deionized through ion-exchange resins, polished to reduce fish odour, ultrafiltered to the specified cut-off, concentrated under vacuum, and spray-dried.

Cold-water species require lower extraction temperatures because their collagen denatures earlier than warm-water material, and process windows are tuned accordingly to preserve yield and colour.
