Isomalt

Isomalt is a disaccharide sugar alcohol designed as a sucrose replacement with exceptional thermal and crystallisation stability, used widely in hard-boiled confectionery and pulled-sugar showpieces.

It is an equimolar mixture of two stereoisomers, 6-O-alpha-D-glucopyranosyl-D-sorbitol (GPS) and 1-O-alpha-D-glucopyranosyl-D-mannitol (GPM), with formula C₁₂H₂₄O₁₁ and CAS 64519-82-0. The blend delivers 45 to 65 percent of the sweetness of sucrose without aftertaste.

Regulatory Status

Isomalt holds broad regulatory approval as a food additive.

In the European Union it carries E number E953, with no overall maximum limit in the additives regulation though it is subject to the general quantum satis principle. EU labelling requires the statement excessive consumption may produce laxative effects when a serving delivers more than 10 grams of polyol.

The U.S. Food and Drug Administration accepted isomalt as GRAS in 1990 for use as a nutritive sweetener and bulking agent. The agency has accepted a labelling caloric value of 2.0 kcal per gram.

JECFA has evaluated isomalt as safe for food use. Pharmacopoeial monographs appear in USP-NF and Ph. Eur.

The substance is Halal and Kosher certifiable and is not a recognised food allergen.

Manufacturing Process

Isomalt is produced from sucrose in a two-step enzymatic and catalytic process.

In the first step refined sucrose is converted to isomaltulose (palatinose) by the enzyme sucrose isomerase, produced by Protaminobacter rubrum or related bacteria. The enzymatic rearrangement converts the alpha-1,2 glycosidic bond of sucrose into an alpha-1,6 bond between glucose and fructose, yielding isomaltulose.

In the second step isomaltulose is catalytically hydrogenated under hydrogen pressure over a Raney nickel catalyst. The fructose moiety is reduced and yields the two stereoisomers GPS and GPM in approximately equimolar proportion, producing the characteristic isomalt mixture.

The product solution is filtered, demineralized through ion-exchange resins, decolorised on activated carbon, and concentrated under vacuum. Controlled cooling crystallisation gives the crystalline product, which is centrifuged, dried, and milled.
