Monk Fruit Mogroside is graded by mogroside V purity, expressed on a dry basis.
The 25 percent grade is the standard entry-level commercial cut. It balances cost against taste performance and is widely used in beverages, sauces, and tabletop blends.
The 40 percent grade is the most commonly traded mid-tier purity. It delivers cleaner sweetness and is the default for many beverage and dairy launches at the top of the market.
The 50 percent grade is the high-purity tier and is preferred where minimum off notes and maximum sweetness intensity per gram are required.
Higher purities at 60 percent and above, and specialty Reb-style enriched cuts, exist for clinical nutrition, pharmaceutical taste masking, and supplement use at the top of the market. Soluble grades co-processed with carriers address dispersibility in cold liquids.

Manufacturing Process
Production starts with fresh or dried monk fruit from the karst-mountain growing regions of southern China, primarily Guangxi province.
Fresh fruit is pulped and pressed, while dried fruit is rehydrated and extracted with hot water. The crude extract is screened, centrifuged, and decolorised over activated carbon to remove the deep brown shell pigments and soften off notes.
The decolorised extract is loaded onto macroporous adsorbent resins that selectively retain the mogrosides. Elution with food-grade ethanol releases an enriched mogroside fraction.
For higher purity grades, the eluate is fractionated by repeated adsorption cycles, by membrane separation, or by crystallisation in aqueous ethanol. The mogroside V content rises with each pass while lower mogrosides and residual sugars are removed. The final cut is concentrated and spray dried to a free-flowing off-white to pale tan powder.
