Roasted duck flavour is a compounded savoury flavouring that reproduces the aroma and taste of roast duck, the profile associated above all with Peking and Cantonese roast duck. It is a thermal process reaction flavour combined with duck fat and a top note package, rather than a simple extract of the cooked bird.
Several strands make up the target profile. The Maillard reaction between cysteine and reducing sugars produces the furanthiols, thiophenes and pyrazines that give any roasted meat its backbone, while duck fat, which is more unsaturated than pork or beef fat, supplies on heating a distinctive set of aldehydes, ketones and lactones that identify the species. The lacquered skin of a real roast duck contributes caramelised sugar and a light smoke note, and commercial flavours reproduce that layer with caramel and smoke components.
Four presentations are traded: a paste, an oil soluble liquid, a water soluble liquid, and a spray dried powder on a maltodextrin or salt carrier. Paste and powder disperse in hot water and the oil form is fat soluble. The most volatile compounds are lost under prolonged boiling, so dosing point in the process is specified as carefully as dose rate, and fat rich grades are packed under nitrogen.

Common Markets Grades
The primary split is physical form, with paste giving the fullest roasted character, powder giving the convenience needed for dry sachets and instant products, and liquids made water soluble for brines and marinades or oil soluble for fat phases and fried applications.
Profile is the second axis, since Peking style with its lacquered skin and light smoke differs from Cantonese roast duck with its stronger spice and soy character, and braised duck is a further separate direction. Grades made with genuine duck extract and rendered duck fat are separated from grades built on vegetable protein hydrolysate and aroma chemicals alone, and the duck content is often declared. Smoke bearing grades are distinguished from smoke free ones, clean label grades avoid monosodium glutamate, and halal certified production is run as a separate line.

Regulatory Status
In the United States the product is a compounded flavouring built from food ingredients. Its components rely on FEMA GRAS status and on the synthetic flavouring substances permitted under 21 CFR 172.515, with natural extractives covered by 21 CFR 182.20, and the finished flavour is declared as natural flavour or artificial flavour according to what was used. Where genuine duck extract or rendered duck fat is included, the poultry derived material brings the ingredient within the inspection and labelling authority of the Food Safety and Inspection Service. Caramel colour, hydrolysed protein, yeast extract and monosodium glutamate are declared as separate ingredients.
In the European Union the product is a thermal process flavouring combined with flavouring substances and, where used, a smoke flavouring, all governed by Regulation (EC) No 1334/2008 and, for the smoke fraction, by the specific regulation requiring each primary smoke product to be authorised. That framework sets the heating conditions a thermal process flavouring must meet and requires discrete flavouring substances to appear on the Union list. Flavourings take no E number, while caramel colours in the E150 series and flavour enhancers are additives regulated in their own right. Poultry derived components fall under the animal products hygiene and import control framework.
Manufacturing Process
The reaction base is prepared in a jacketed pressure reactor. Hydrolysed protein or duck extract is charged with a reducing sugar such as xylose or glucose, cysteine or thiamine as the sulphur donor, and rendered duck fat that carries the species specific lipid precursors. The pH is set and the batch is cooked under pressure, generally in the range of 110 to 130 degrees Celsius for a roasted profile, since higher temperature and lower pH push the reaction toward the roasted rather than the boiled character. Cooling at the endpoint is rapid, because holding the batch hot develops burnt notes that cannot be corrected later.
The cooled reaction mass is compounded at low temperature with caramel for the lacquered skin note, a smoke fraction where the grade calls for it, spice extracts in the Cantonese direction, salt, flavour enhancers and the volatile top note aroma chemicals. Paste grades are colloid milled and filled warm. Powder grades are emulsified with maltodextrin and modified starch, homogenised at high pressure and spray dried in a co-current tower at a low outlet temperature, with a top note package plated onto the cooled powder to restore volatiles lost in the drier. Batches are cleared by a trained sensory panel against a retained reference and packed under nitrogen.
