Soy Peptide

Soy Peptide is a partially hydrolysed soy protein in which the long polypeptide chains have been cleaved into shorter fragments, typically di-, tri-, and oligopeptides of 2 to 10 amino acid residues.

The shorter chain length gives soy peptide higher solubility, faster digestive absorption, and lower allergenicity than intact soy protein, which is why it has become a standard ingredient in sports nutrition and clinical nutrition formulations.

Common Markets Grades

Soy Peptide is classified by degree of hydrolysis (DH), average molecular weight, and protein content.

Low DH grades (5 to 10 percent) retain most of the functional properties of the parent protein and are used where mild hydrolysis is enough to improve solubility. Medium DH grades (15 to 25 percent) target sports drinks and meal replacements. High DH grades (above 30 percent) target medical nutrition and infant formula adjuncts.

Average molecular weight grades span 200 to 500 Da for rapid absorption products, 500 to 1500 Da for general sports nutrition, and above 1500 Da for functional beverage applications.

Protein content typically runs at 80 to 90 percent on a dry basis. Spray-dried powder is the dominant format, with granulated and instantized grades available for direct stick-pack use.

Regulatory Status

Soy Peptide is regulated as a conventional food ingredient or as a protein hydrolysate, depending on the jurisdiction.

In the United States it is recognised as a food ingredient when made from food-grade SPI using food-grade enzymes. GRAS notifications cover specific commercial grades.

The European Union treats soy protein hydrolysate as a standard ingredient. Soy allergen labelling under Regulation (EU) 1169/2011 is mandatory regardless of the degree of hydrolysis.

Codex Alimentarius covers soy protein products including hydrolysates under CXS 175-1989.

Halal, Kosher, and Non-GMO Project certifications are routinely available. Most commercial supply is produced from non-GMO identity-preserved soybeans for the sports nutrition and clinical channels.

Manufacturing Process

Production begins with soy protein isolate (SPI) at 88 to 92 percent protein. The isolate is dispersed in water at 8 to 12 percent solids and pH adjusted to the optimum for the chosen enzyme.

Food-grade endo- and exopeptidases are then added in sequence. Common combinations include alcalase followed by flavourzyme, or papain followed by a debittering enzyme. Reaction temperature and time are tuned to hit the target degree of hydrolysis.

The reaction is stopped by heat inactivation at 85 to 95 degrees Celsius. The hydrolysate is centrifuged to remove insoluble residue, then carbon-treated to reduce bitter peptides and off-flavours.

Membrane filtration is used to fractionate by molecular weight. Ultrafiltration with 1 to 10 kDa cutoff membranes isolates the target peptide range, with the permeate going to the lower molecular weight product and the retentate recycled.

The clarified peptide solution is concentrated by evaporation or reverse osmosis, then spray-dried into a free-flowing powder.
