Common Markets Grades

The commercial grading system is built around alpha-amylase inhibitor units (AAIU) per milligram, which is the only meaningful measure of in-use activity.

Mainstream supplement grades carry 3,000, 5,000, and 10,000 AAIU per gram. The 5,000 AAIU grade is the standard grade for capsule and tablet formulas, while 10,000 AAIU material is reserved for higher-priced or low-dose stickpack lines.

Protein-content grades, expressed as percent crude protein, sit at 50, 70, and 80 percent. These specifications are often paired with the activity spec on the certificate of analysis.

The standard format is a fine off-white to cream-coloured powder with a mild bean note. Spray-dried versions with maltodextrin carriers are produced for stickpack and ready-to-mix beverage use.

Regulatory Status

White kidney bean has a long history of dietary consumption worldwide. Cooked beans are a staple food, and the extract has been used as a supplement ingredient since the 1980s.

In the United States the extract is sold as a dietary-supplement ingredient under DSHEA. Several commercial preparations carry self-affirmed GRAS status for use in functional foods and beverages.

In the European Union the extract is treated as a food-supplement ingredient at the member-state level, and EFSA has approved no harmonised health claims.

In Japan a Phase 2 alpha-amylase inhibitor preparation has cleared the Foods with Function Claims notification system for post-meal blood-sugar support.

Raw or undercooked beans contain phytohemagglutinin, a lectin that is toxic when consumed in bulk. Commercial extracts are processed to remove or inactivate this lectin and carry test results to confirm it.

Manufacturing Process

White kidney beans are sourced from cultivated Phaseolus vulgaris, with production concentrated in the United States, Canada, China, and parts of Latin America.

Beans are cleaned, dehulled, and milled into a flour. Aqueous extraction at controlled pH solubilises the protein fraction containing phaseolamin while leaving most starch behind as a sediment.

The protein-rich liquor is clarified by centrifugation, then concentrated through ultrafiltration to remove low-molecular-weight peptides and salts. This step is critical: phaseolamin is damaged by heat and by pH shifts, so processing temperatures are kept below 50 degrees C and pH is held in a narrow window.

The concentrate is spray-dried with minimal inlet temperature to preserve enzyme-inhibition activity. The highest-activity grades skip the spray-drying step entirely in favor of low-temperature drying.

Quality control measures phaseolamin activity by an enzymatic assay that quantifies the inhibition of porcine pancreatic alpha-amylase against a defined starch substrate. The result is reported in AAIU per gram.
