Acid Resistant Konjac Micro is a micron-particle konjac glucomannan that has been physically and chemically modified to resist viscosity loss in acidic systems below pH 4. The product retains the rapid cold-dispersion of standard micro flour while standing up to citric, malic, and lactic acid environments that would degrade conventional konjac.
Native konjac glucomannan is hydrolysed by acid at low pH, particularly when heated. The acid-resistant variant uses controlled cross-linking and selective fractionation to slow that hydrolysis without losing functional viscosity.

There are two principal specifications of Acid Resistant Konjac Micro.
The beverage grade is optimised for ready-to-drink products at pH 3.5 to 4.5, with viscosity retention above 80 percent after a 90-day shelf-life simulation.
The hot-fill grade is built for fruit-flavoured products that pass through a brief pasteurisation at 85 to 95 °C in acidic conditions, with viscosity retention above 70 percent after the heat step.
Both grades run at 200 to 300 mesh micron particle size for rapid cold dispersion.

The product is regulated as modified konjac gum in most jurisdictions.
It carries E425 designation in the European Union when the cross-linking reagent and residual levels conform to the additive specification. The U.S. FDA permits chemically modified konjac under the modified food starch and modified gum frameworks.
Halal, Kosher, vegan, non-GMO, and gluten-free certifications are routinely available. Mini-cup jelly format restrictions apply where legislated.
Manufacturing Process
Production starts from purified konjac gum at above 90 percent glucomannan content.
The gum is treated with a controlled cross-linking agent, typically sodium trimetaphosphate or a food-grade epoxide, under mild alkaline conditions. The cross-links reinforce the polymer backbone against acid hydrolysis.
After reaction, the modified gum is washed thoroughly to remove residual reagent and salts, then dried under vacuum to preserve molecular weight. The dried product is jet-milled to micron particle size and air-classified to the target distribution.
Quality control includes accelerated acid-stability testing, in which the product is held in pH 3.5 citric acid solution at 40 °C for one to two weeks and viscosity is measured.
