In the United States collagen hydrolysate from cattle is used as a food ingredient and as a dietary ingredient under the dietary supplement framework, with gelatin and its hydrolysates treated as generally recognised as safe. The controlling additional requirement is the Food and Drug Administration's prohibition on the use of certain cattle material in human food, which restricts the tissues that may be used and the origin and age of the animals in order to manage the risk of bovine spongiform encephalopathy, and the agency has published guidance specific to the sourcing and manufacture of gelatin and collagen. Skin, joint and bone statements are structure and function claims rather than authorised health claims.
In the European Union collagen and gelatin for human consumption are covered by the hygiene regulation for food of animal origin, which specifies the permitted raw materials, requires approval of the processing establishments and prescribes the treatments to be applied, and bovine bone is subject in addition to the transmissible spongiform encephalopathy regulation, which excludes specified risk material and governs the origin of the raw material. Manufacturing Process
Cattle bone is received as crushed, degreased chip from approved abattoirs with documented traceability, sorted, washed and degreased again with hot water or steam so that residual fat cannot carry rancid notes through the rest of the process. The clean chip is demineralised by steeping in dilute hydrochloric acid over several days, dissolving the calcium phosphate and leaving ossein, the soft translucent collagen matrix. The spent acid liquor is processed into dicalcium phosphate as a co-product rather than discarded.
The ossein is washed to neutrality and limed, held in a calcium hydroxide bath for several weeks, which strips non-collagen protein and opens the cross-linked structure so that the collagen extracts cleanly. It is then washed again, neutralised and extracted with hot water in successive batches at rising temperature to give gelatin liquor.
The liquor is filtered, deionised over ion exchange resin and concentrated. Hydrolysis follows: the solution is adjusted to the enzyme's working pH and temperature and treated with food grade proteases that cut the chains to the target molecular weight, tracked by viscosity or gel permeation chromatography, and the enzymes are then heat inactivated. The hydrolysate is decolourised over activated carbon, filtered, sterilised, concentrated under vacuum and spray dried, with instant grades agglomerated in a fluidised bed before sieving and packing.
