Chondroitin Sulphate
Chondroitin Sulphate is a sulfated glycosaminoglycan (GAG) built from repeating disaccharide units of D-glucuronic acid and N-acetylgalactosamine, with sulphate groups at the 4- or 6-position of the galactosamine residue.
It is one of the principal structural components of cartilage, bone, skin, and the vascular wall. The polymer is produced commercially as a free acid or, more commonly, as the sodium salt under CAS number 9007-28-7.

Pharmaceutical-grade material at 95 to 99 percent assay (CPC titration) meets USP and Ph. Eur. monographs and is produced for prescription osteoarthritis products in several EU countries and for injectable veterinary medicines.
Supplement-grade material at 90 percent assay is the standard grade for joint-health capsules and tablets, often co-blended with glucosamine and MSM.
Cosmetic-grade material at 85 to 90 percent assay is produced for hydrating serums and ophthalmic formulations.
Molecular weight ranges from about 10 kDa to 50 kDa depending on the source tissue and processing conditions. Source claims of bovine, porcine, avian (chicken sternum), or marine (shark cartilage, fish nasal cartilage) origin are documented on the certificate for allergen and dietary declarations downstream.

The U.S. Food and Drug Administration accepts chondroitin sulphate as a dietary ingredient under DSHEA. Major NIH-funded trials (GAIT) have studied its efficacy in knee osteoarthritis.
The European Medicines Agency authorises chondroitin sulphate as a prescription medicine for the symptomatic treatment of osteoarthritis in several member states, with both food-supplement and pharmacy channels active.
Pharmacopoeial monographs for Chondroitin Sulphate Sodium appear in the United States Pharmacopeia (USP), the European Pharmacopoeia (Ph. Eur.), and the Japanese Pharmacopoeia (JP). The monographs specify assay, identification, molecular-weight distribution, and species-of-origin testing.
Bovine source material is subject to TSE/BSE risk evaluation under EMA and FDA guidance. Marine source material must address country of origin and sustainability claims, particularly for shark cartilage.
Manufacturing Process
Industrial chondroitin sulphate is extracted from animal cartilage rather than synthesised.
Bovine tracheal cartilage, porcine nasal septum, chicken keel and sternum cartilage, and shark cartilage are the principal feedstocks. The raw material is washed, defatted, and digested with proteolytic enzymes such as papain or alcalase to release the GAG chains from the proteoglycan core protein.
The crude extract is filtered, treated with activated carbon, and the GAGs are precipitated with ethanol or quaternary ammonium reagents. Ion-exchange chromatography removes other GAGs (notably keratan sulphate and hyaluronic acid), and a second precipitation gives the purified chondroitin sulphate.
The wet cake is dissolved in water, neutralised to give the sodium salt (or kept as the free acid for niche use), spray-dried, and milled. Final material is tested for assay, molecular weight by HPLC-SEC, sulphate ratio, and species identification by PCR or electrophoresis.
A small but growing fermentation route produces non-animal chondroitin sulphate via engineered Escherichia coli, but volumes remain limited.
