Curdlan Gum

Curdlan Gum is a linear β-1,3-glucan polysaccharide produced by aerobic fermentation of Alcaligenes faecalis var. myxogenes. It is the rare hydrocolloid that forms a thermo-irreversible gel when an aqueous suspension is heated above 80 °C and then held or cooled.

The polymer is built from glucose units linked exclusively by β-1,3 glycosidic bonds, with no branching or substitution. This pure backbone is what produces the unusual thermal gelling behaviour.

There are two grades of Curdlan Gum, food and pharmaceutical.

Food-grade curdlan runs at 80 to 95 percent glucan purity and is the standard for processed meat, surimi, noodles, and bakery applications.

Pharmaceutical-grade curdlan carries a higher purity and serves drug delivery, vaccine adjuvant, and biomedical research use.

Particle size grades range from coarse 80 mesh for processed meat to fine 200 mesh for noodle and bakery dough use.

Regulatory Status

Curdlan Gum is approved as a food additive in several major markets.

It is permitted in Japan, Korea, Taiwan, China, and the United States (as GRAS for specific applications including surimi and noodles). The European Union has authorised curdlan as E424 under Regulation (EC) No 1333/2008 for limited categories.

JECFA reviewed curdlan and assigned ADI not specified. Halal, Kosher, vegan, non-GMO, and gluten-free certifications are routinely available.

Manufacturing Process

Curdlan is produced by submerged aerobic fermentation of Alcaligenes faecalis on a glucose- or sucrose-based medium with controlled nitrogen, phosphate, and trace elements.

The organism secretes curdlan into the broth over a 60 to 80 hour fermentation at 30 °C. Unlike many gum fermentations, curdlan is poorly soluble in water and accumulates as fine particles around the cells.

After fermentation, the broth is alkalised to dissolve the polymer, separated from biomass by centrifugation, and re-precipitated by neutralisation. The precipitate is washed, dewatered, dried, and milled.

Chinese fermentation manufacturers in Jiangsu and Shandong supply most of the world's commercial curdlan today, with smaller historic production in Japan by Takeda.
