Distilled Monoglyceride
Distilled Monoglyceride, commonly abbreviated DMG, is a high-purity monoglyceride emulsifier produced by molecular distillation of a crude monoglyceride mixture. The finished material carries monoester content above 90 percent and delivers stronger, more reproducible emulsifying performance than the parent E471 mixture.
The product is white beadlets, flakes, or powder with a clean, neutral odour. The high monoester content gives the molecule a pronounced amphiphilic character that anchors strongly at fat-water interfaces.

Common Markets Grades
Distilled Monoglyceride is graded by monoester content, iodine value, and parent fat profile.
Standard distilled grades carry monoester content of 90 to 95 percent. Premium grades reach 95 to 98 percent monoester content for demanding bakery, dairy, and pharmaceutical applications.
Saturated grades are produced from fully hydrogenated palm or soybean oil and carry iodine values below 5 with melting points between 65 and 75 degrees Celsius. Unsaturated grades retain the native fatty acid profile of the parent oil for use in cold-temperature applications.
Source fat selection covers palm, palm kernel, soybean, sunflower, rapeseed, and tallow. The choice determines the melting profile, label claims, and end-use suitability of the final material.

Regulatory Status
Distilled Monoglyceride falls within the mono and diglycerides additive class and is approved under E471 in the European Union for general food use at quantum satis.
The United States Food and Drug Administration covers distilled monoglycerides under the Generally Recognized as Safe listing for mono and diglycerides in 21 CFR 184.1505 and 21 CFR 182.4505.
JECFA reviewed mono and diglycerides as a class and concluded that an intake limit was not required.
The Food Chemicals Codex and the European Pharmacopoeia carry monographs covering monoester content, free glycerol, and iodine value. The European Pharmacopoeia includes a specific monograph for glycerol monostearate for pharmaceutical use. Kosher and Halal certifications are widely available, with non-GMO and organic options for plant-source grades.
Manufacturing Process
Distilled Monoglyceride is produced by molecular distillation of a crude monoglyceride mixture under high vacuum.
The starting material is a standard mono and diglyceride mixture from glycerolysis of refined edible oil. The crude mixture is fed to a falling film or wiped film molecular still operating at pressures below 0.01 millibar.
Under the high vacuum, the monoglyceride fraction vaporises at a moderate temperature of 150 to 180 degrees Celsius and condenses on a cold internal surface only millimetres away from the heated evaporation surface. The diglyceride and triglyceride fractions remain in the heavier residue stream.
The distillate is solidified by spray cooling or chilled drum flaking to produce beadlets, flakes, or powder. The finished material is packaged under controlled atmosphere to limit oxidation, with quality control covering monoester content, iodine value, free glycerol, and free fatty acid.
