High Maltose Syrup (HMS) is a clear, viscous starch hydrolysate in which maltose accounts for 70 percent or more of dry substance. The balance is glucose, maltotriose, and a small fraction of higher-DP dextrins, with the exact distribution set by enzyme selection and reaction control.
The high maltose share gives the product a milder sweetness, lower hygroscopicity, higher boiling point, and significantly reduced Maillard browning compared with conventional glucose syrup. These properties make HMS the specification of choice for premium hard candy, glazes, and brewing adjuncts where colour and shelf stability are critical.

High Maltose Syrup is defined by maltose content on a dry basis.
The baseline HMS grade specifies 70 percent minimum maltose. Premium grades reach 75 to 80 percent maltose, often paired with very low glucose content (below 2 percent) for applications requiring minimal browning or controlled fermentability.
Extra-high-maltose grades approaching 85 percent are produced with intensified beta-amylase plus pullulanase conversion, primarily for specialty confectionery and pharmaceutical syrups. The product is held at 75 to 82 percent dry solids in heated tanks to prevent maltose crystallisation.
The syrup is normally decolorised with activated carbon, demineralized through mixed-bed ion exchange, and polished to near-water-white colour. Spray-dried high-maltose powder is produced for dry-blend, bakery premix, and instant-drink applications where a free-flowing solid is preferred.

Regulatory Status
High Maltose Syrup is treated as a sugar product rather than a food additive in essentially every regulated market.
In the European Union Commission Directive 2001/111/EC on sugars intended for human consumption covers it, within the broader category of glucose syrups defined by composition. No E number applies.
The U.S. Food and Drug Administration recognises high-maltose corn syrup as GRAS within the corn syrup category under 21 CFR 184.1865 when produced from maize starch. JECFA has not established a numerical intake limit.
Pharmacopoeial-style specifications for high-maltose-rich syrups are supported in the USP-NF and JP. Halal, kosher, vegan, and non-GMO certifications are widely available depending on the starch feedstock.
Manufacturing Process
High Maltose Syrup is produced from refined starch by intensified dual-enzyme conversion.
Starch slurry from maize, rice, wheat, or tapioca is gelatinized in a jet cooker and liquefied with thermostable alpha-amylase to a low dextrose equivalent. Tight control of the liquefaction step is critical, as over-conversion at this stage caps the maximum achievable maltose content.
The liquefied stream is then saccharified with beta-amylase in combination with pullulanase. Pullulanase cleaves the alpha-1,6 branches of amylopectin, exposing additional non-reducing ends on which beta-amylase can act. The combined enzyme action drives maltose content above the 70 percent threshold.
The hydrolysate is decolorised through activated carbon, demineralized on mixed-bed ion-exchange resins, and polished by filtration. It is evaporated to 75 to 82 percent dry solids and held in heated storage to prevent precipitation of maltose crystals.
