Standard supplement grade assays at 98.0 to 102.0 percent on the dried basis, with L-carnitine content controlled to 57.0 to 60.0 percent and fumaric acid measured by HPLC. D-carnitine, related substances, residual solvents, and heavy metals are restricted to tight in-house limits.
Particle size is generally a fine to medium powder. The salt flows reasonably well and shows better moisture resistance than the free base, though it is slightly more hygroscopic than the L-tartrate at high humidity.
The fumarate tastes mildly sour and is compatible with citrus, berry, and stone-fruit flavour systems in chewable and stick-pack formats.

The salt has been included in EFSA evaluations of L-carnitine sources for food supplements with no separate safety concern raised on the fumarate counter-ion at normal use levels.

Manufacturing Process
L-Carnitine Fumarate is produced by neutralisation of L-carnitine free base with fumaric acid in aqueous or aqueous-alcohol medium, followed by crystallisation.
The L-carnitine starting material is sourced from the asymmetric synthesis route from epichlorohydrin or from biocatalytic routes operated by Chinese manufacturers. Fumaric acid is a standard commodity organic acid produced industrially by isomerisation of maleic acid.
The reaction is run with controlled stoichiometry to deliver the 1:1 salt and to avoid free fumaric acid contamination, which would cake the final powder. Crystallisation is followed by alcohol wash, vacuum drying, and milling.
Final product is checked for fumarate content, chiral purity, residual moisture, and microbiological quality before release.
