Monosodium Phosphate
Monosodium Phosphate is the mono-sodium salt of orthophosphoric acid with the formula NaH₂PO₄ and CAS number 7558-80-7. It carries the European food additive number E339(i).
The material is a white, odourless, slightly hygroscopic crystalline powder. In water it gives an acidic solution with a pH near 4.5 at one percent concentration, which makes it useful as a pH adjuster, acidulant, and buffer salt in food, beverage, and technical applications.

The trade divides Monosodium Phosphate into food, technical and pharmaceutical grades.
Food grade MSP meets FCC and USP specifications for purity, heavy metals, fluoride, and arsenic. It comes as anhydrous powder, monohydrate (NaH₂PO₄·H₂O), and dihydrate (NaH₂PO₄·2H₂O). The monohydrate is the most common commercial form because it flows freely and resists caking during transport.
Granular grades with controlled particle size are produced for dry-blend pre-mixes and effervescent tablet manufacture. Fine powder grades are favored for solution preparation in beverages, dialysis concentrates, and laboratory buffers.
Technical grade material is used for boiler water treatment, metal surface conditioning, and as a feedstock for sodium polyphosphate manufacture. Pharmaceutical grade is produced for saline laxative formulations and as a buffer in injectable preparations.

Regulatory Status
Monosodium Phosphate is authorised as a food additive in all major regulated markets.
In the European Union it is listed as E339(i) and permitted in many categories under Regulation 1333/2008, often grouped with the other sodium, potassium, calcium, and magnesium phosphates as part of the E339 to E343 family.
In the United States the FDA recognises it as GRAS under 21 CFR 182.1778 and 182.6778 and clears it for specific applications under 21 CFR 172, 173, and 184. The Food Chemicals Codex (FCC) provides the relevant identity and purity specification.
Pharmacopoeial monographs cover MSP in the United States Pharmacopeia (USP), the European Pharmacopoeia (Ph. Eur.), the British Pharmacopoeia (BP), and the Japanese Pharmacopoeia (JP). Kosher and Halal certificates are routinely available because the manufacturing route does not involve animal-derived inputs.
Manufacturing Process
Monosodium Phosphate is produced by partial neutralisation of food-grade phosphoric acid with sodium carbonate or sodium hydroxide. The reaction is controlled to a stoichiometry of one mole of sodium per mole of phosphate, leaving two acidic protons on the phosphate group.
The phosphoric acid feedstock is itself made by the wet process from phosphate rock and sulphuric acid, followed by solvent purification to remove fluoride, arsenic, cadmium, and lead before food-grade use. A smaller share of global supply still comes from the thermal process, in which elemental phosphorus is burned to P₂O₅ and hydrated.
After neutralisation the solution is concentrated by evaporation, then crystallised under controlled cooling. The choice of crystallisation temperature determines whether the product leaves the plant as anhydrous, monohydrate, or dihydrate crystals.
The wet crystals are centrifuged, dried in a fluid-bed or rotary dryer, sieved to the target particle size, and packed in lined paper bags or bulk bags under low-humidity conditions.
