Natamycin 50% in Glucose is a standardised dry blend in which natamycin active is co-milled with anhydrous glucose to give a flowable powder with 50 percent assay. The format is designed for direct addition to dry mixes and surface dusting where a uniform low dose of antifungal is required.

Glucose was selected as the carrier because it is metabolically inert with respect to the antifungal action, dissolves cleanly in water and dough systems, and contributes no off-flavour at the milligram-per-kilogram doses typical of preservative use.

Standard particle size is fine free-flowing powder in the 100 to 250 micron range, suitable for blender feeding. A finer micronised version is produced for spray suspensions.

Regulatory Status

The active substance carries the European E number E235 and is permitted under Annex II of Regulation 1333/2008 only as a surface treatment of hard, semi-hard, and semi-soft cheese and of dried, cured sausage. Use in bakery, confectionery, and other matrices is not permitted under current EU rules.

The U.S. Food and Drug Administration regulates natamycin under 21 CFR 172.155, permitted as an antimycotic on the surface of cuts and slices of cheese at up to 20 mg per kg. Broader food-additive petitions covering bakery and beverage use have been filed in some jurisdictions outside the EU.

The glucose carrier is a standard food ingredient with no restriction beyond labelling. The finished blend should be declared on the ingredient list as natamycin (E235) on glucose, in compliance with the applicable jurisdiction.

JECFA has evaluated natamycin and pharmacopoeial monographs appear in the United States Pharmacopeia, the European Pharmacopoeia, and the British Pharmacopoeia. Halal and Kosher certifications are routinely available.

Manufacturing Process

The active is produced by submerged fermentation of Streptomyces natalensis followed by solvent extraction, crystallisation, and washing to pharmacopoeia-grade purity.

Crystalline natamycin at 95 percent or higher assay is then blended with food-grade anhydrous glucose in a controlled environment. The two powders are co-milled to a target particle size that ensures the active is evenly dispersed through the carrier matrix.

The finished blend is sampled and assayed by ultraviolet absorption at 303 nm against a reference standard to confirm the 50 percent specification.

Packaging is typically in foil-lined bags inside fibre drums, with the active stable for 24 months when stored cool, dry, and away from direct light.
