Natamycin 50% in NaCl is a dry blend of pharmacopoeia-grade natamycin co-milled with food-grade sodium chloride to deliver 50 percent active in a flowable powder. The salt carrier is chosen to match the meat-curing environment, where sodium chloride is already a primary process ingredient.

The grade is engineered for cured-meat brines, dry-cure mixes, and sausage casing dips, applications in which the carrier itself contributes to the cure rather than being a foreign material.

This grade is specified at 50.0 percent natamycin minimum with the balance made up by food-grade refined sodium chloride.

Standard particle size is a fine free-flowing powder that dissolves quickly into cold brine. A coarser pickling-salt grade is also available for dry-cure rub applications where the salt itself is part of the surface coating.

The blend is pale cream with the dry, neutral profile expected of a salt carrier.

Regulatory Status

The active substance carries the European E number E235 and is permitted under Annex II of Regulation 1333/2008 only as a surface treatment of hard, semi-hard, and semi-soft cheese and of dried, cured sausage. The maximum residue limit on cured sausage is 1 mg per dm² of casing surface, with no detectable residue beyond 5 mm depth.

The U.S. Food and Drug Administration regulates natamycin under 21 CFR 172.155 for cheese surface use. Sausage surface use is also permitted under the U.S. Department of Agriculture Food Safety and Inspection Service rules for natamycin on the casing of dry-cured sausage.

The sodium chloride carrier is a standard food ingredient with no allergen status and minimal labelling beyond ingredient declaration. The finished blend should be declared as natamycin (E235) on salt or natamycin on sodium chloride, as appropriate to the jurisdiction.

Pharmacopoeial monographs appear in the United States Pharmacopeia, the European Pharmacopoeia, and the British Pharmacopoeia. Halal and Kosher certifications are routinely available.

Manufacturing Process

The active is produced by submerged fermentation of Streptomyces natalensis followed by extraction, crystallisation, and washing to pharmacopoeia-grade purity at 95 percent or higher assay.

The crystals are blended with food-grade refined sodium chloride in a controlled environment and co-milled to a uniform particle size. Sodium chloride was chosen as the carrier because it is dry, non-hygroscopic at typical storage humidity, and entirely compatible with cured-meat process water.

The blend is assayed by ultraviolet absorption at 303 nm against a reference standard to confirm the 50 percent specification.

Packaging is typically foil-lined bags in fibre drums or HDPE pails, with the active stable for 24 months when stored cool, dry, and protected from light.
