Oyster Peptide is an enzymatic hydrolysate of the soft body of the Pacific oyster, Crassostrea gigas, and in some product lines closely related species such as Crassostrea angulata, processed into a water-soluble low molecular weight protein fraction.
The ingredient is one of the most heavily marketed marine peptides in the East Asian male wellness category, supported by the natural mineral profile of the oyster and in particular its high zinc content.

Standard food grade typically delivers 80 to 90 percent protein on a dry basis, with most peptides below 5000 Daltons and zinc content in the range of 0.1 to 0.3 percent. This grade suits capsules, tablets, and conventional oral liquid products.

The United States treats oyster peptide as a food ingredient with self-affirmed GRAS, subject to FDA seafood HACCP rules. Mollusc allergen labelling is mandatory.
In the European Union, hydrolysates from Crassostrea gigas are generally considered to fall within established food use given the long European tradition of consuming Pacific oysters, but individual operators may choose to confirm status for specific processes and intended uses.
Heavy metal control, in particular cadmium, is a recurring quality issue in this category because oysters concentrate trace metals from the surrounding water. Batch by batch testing is standard practice.
Manufacturing Process
Production starts with cleaned oyster meat, typically sourced from shucking lines that supply the fresh and frozen seafood market. Trim and undersized oysters are common feedstock and help keep the cost of the ingredient down.
The meat is ground, often with a controlled cold soak to manage initial microbial load, then digested with food-grade proteases. Alcalase, flavourzyme, papain, and bromelain are the most common enzymes, used singly or in sequence to reach the target degree of hydrolysis with acceptable flavour.
After heat inactivation the hydrolysate is centrifuged to remove residual shell fragments and lipid, then filtered through successive membranes. Ultrafiltration with a 5 or 10 kDa cutoff is the standard finishing step for an oligopeptide product.
Decolorisation with activated carbon, deodorisation with cyclodextrin or molecular sieves, vacuum concentration, and spray drying complete the process. The finished powder is light beige with a mild marine aroma, and zinc content is verified on the certificate of analysis since it is the basis of much of the product's positioning.
