Sodium Copper Chlorophyllin is a water-soluble green colourant derived from plant chlorophyll by saponification and replacement of the central magnesium ion with copper. It delivers clean blue-green shades in food, beverage, supplement, and personal care applications.

The colourant carries the E number E141ii in the European Union and CAS 11006-34-1. It is the dominant water-soluble member of the chlorophyll colour family, complementing the oil-soluble chlorophyll (E140) used for fat-based systems.

Regulatory Status

The European Union approves Sodium Copper Chlorophyllin as a food colour under E141ii, and Regulation (EC) No 1333/2008 defines the use levels per food category. The closely related copper complexes of chlorophyll fall under E141i.

The U.S. Food and Drug Administration permits sodium copper chlorophyllin as a colour additive exempt from certification under 21 CFR 73.125, restricted to use in citrus-based dry beverage mixes at levels not to exceed 0.2 percent. Broader food-colour use is not currently approved in the United States, though the substance is widely used in dietary supplements under separate provisions.

JECFA has evaluated chlorophyllin-copper complexes and accepted them for food use within established limits. The Codex name is Chlorophylls and Chlorophyllins, Copper Complexes (INS 141).

The colourant is plant-derived and is generally accepted as vegan, vegetarian, kosher, and halal. Bound copper content is monitored to specification, and free ionic copper limits are typically very low.

Manufacturing Process

The starting material is chlorophyll-rich plant biomass, most commonly alfalfa (lucerne) or grass, with smaller volumes from nettle, spinach, and silkworm droppings (an unusual but historically used Asian source).

Dried biomass is extracted with a polar organic solvent such as acetone or ethanol to yield a crude chlorophyll concentrate. The extract contains a mixture of chlorophyll a and chlorophyll b along with lipids and waxes.

The chlorophyll concentrate is then saponified with alkali, which removes the phytol tail and the methyl ester groups to produce free chlorophyllin acids. The central magnesium is simultaneously displaced and replaced with copper from a copper salt, yielding the more stable Cu-chlorophyllin complex.

The sodium salts of the resulting chlorin acids are precipitated, washed, and spray-dried. The finished material is a dark green powder, freely soluble in water and stable across a broader pH range than the native magnesium chlorophyll.
