Bilberry Extract

Bilberry Extract is a concentrated preparation from the ripe fruit of Vaccinium myrtillus L., a small wild shrub native to the forests and moorlands of northern Europe. The deep blue-black berries are valued for their unusually high anthocyanin content, which colours both skin and flesh.

Commercial grades are standardised to 25 to 36 percent anthocyanins by UV-visible spectrophotometry, with the recognised industry benchmark of 36 percent measured against a cyanidin chloride reference. The extract is a fine, free-flowing purple powder with characteristic berry odour.

The most widely traded grade carries 25 percent total anthocyanins by UV-Vis, suitable for general nutraceutical and beverage formulation. A higher 36 percent UV grade is the long-standing pharmaceutical reference, traceable to the original Italian monograph.

HPLC-verified grades quantify the 15 individual anthocyanin glycosides defined in the European Pharmacopoeia Myrtilli fructus recens extractum siccum raffinatum et normatum monograph. These typically assay 32 to 38 percent anthocyanins by HPLC.

Water-soluble and tableting grades are blended with maltodextrin, gum arabic, or microcrystalline cellulose carriers. A separate organic-certified grade is produced for clean-label dietary supplements.

Regulatory Status

Bilberry Extract is widely accepted as a food and supplement ingredient.

In the European Union the refined and standardised dry extract is the subject of a Ph. Eur. monograph and is recognised as a traditional herbal medicinal product for the symptomatic treatment of minor venous circulatory disturbances. The fresh fruit is a long-standing food.

In the United States the extract is marketed as a dietary supplement under DSHEA, with the berry holding GRAS history of food use. Cosmetic use is permitted under INCI name Vaccinium Myrtillus Fruit Extract.

Japan accepts bilberry as a food ingredient and as a functional food component under the Foods with Function Claims framework, where vision-related claims have been notified. Kosher and Halal certifications are routinely available.

Manufacturing Process

Wild-harvested bilberries from Scandinavia, the Baltic states, Poland, and parts of Russia supply the bulk of raw material. The fruit is gathered in late summer and immediately frozen or dried to lock in the fragile anthocyanins.

Dried berries are milled and macerated in food-grade ethanol or aqueous-alcohol mixtures. The crude extract is filtered, depigmented as needed, and passed through resin columns that selectively bind anthocyanins while letting sugars and organic acids elute.

The bound fraction is desorbed with acidified ethanol, vacuum-concentrated, and spray-dried at controlled inlet temperature to protect the heat-sensitive pigments. A nitrogen-blanketed packaging step limits oxidative loss during storage.

Quality control combines pH-differential UV-Vis assay with HPLC fingerprinting of the 15 anthocyanin glycosides. Authentication is critical because adulteration with cheaper blueberry, black bean hull, or red cabbage pigments has been a recurring issue in the trade.
