Calcium Lactate Gluconate is a mixed calcium salt of lactic and gluconic acids, designed for high solubility in water and used principally in effervescent calcium products.

The compound is a white to off-white granular powder. It carries a calcium content of roughly 13 percent, lower than carbonate or citrate, but its dissolution behaviour in water is dramatically better than that of any single-anion calcium salt of comparable cost.

The European Union permits the individual components calcium lactate (E327) and calcium gluconate (E578) as food additives under Regulation (EC) 1333/2008, and Directive 2002/46/EC lists both as authorised calcium sources in food supplements. The combined Calcium Lactate Gluconate is treated as a mixed salt of these permitted ingredients.

The U.S. Food and Drug Administration affirms calcium lactate and calcium gluconate as GRAS under 21 CFR 184.1207 and 184.1199 respectively. Use as a nutrient or firming agent is generally recognised.

JECFA has evaluated calcium lactate and calcium gluconate within the lactate and gluconate additive groups, with not-specified ADI status reflecting long histories of safe use.

Manufacturing Process

Calcium Lactate Gluconate is produced by co-reaction of lactic acid, gluconic acid, and a calcium source in aqueous solution.

Lactic acid and gluconic acid are dissolved in water in a calibrated molar ratio, typically with gluconic acid in excess relative to lactic acid. Calcium carbonate is then added portionwise, with stirring and mild heating, until carbon dioxide evolution ceases and the solution clarifies.

The resulting clear solution is filtered to polish out any insoluble particles, then concentrated by evaporation. The mixed salt is recovered either by crystallisation on cooling or by spray-drying of the concentrated liquor. Spray-drying is the more common modern route and gives the characteristic free-flowing granular product.

The product is hygroscopic and is packaged in moisture-barrier containers immediately after drying.

Both starting acids are produced by fermentation. Lactic acid is made by fermentation of glucose or sucrose with Lactobacillus species. Gluconic acid is produced by oxidative fermentation of glucose by Aspergillus niger or by enzymatic oxidation with glucose oxidase. The calcium source is mineral-origin limestone-derived calcium carbonate.
