Complex Starch Sugar is a mixed-saccharide syrup produced by partial enzymatic hydrolysis of starch, containing glucose, maltose, maltotriose, and longer oligosaccharides in a balanced ratio.

It is a clear, viscous syrup, used wherever a controlled sweetness, moisture management, and reduced crystallisation tendency are wanted in a single ingredient.

Common Markets Grades

Complex Starch Sugar grades are defined by dextrose equivalent (DE) and saccharide spectrum.

Low-DE syrups at 30 to 42 DE deliver high viscosity, modest sweetness, and strong bodying for confectionery and frozen desserts.

Mid-DE syrups at 42 to 55 DE are the most widely used, with balanced sweetness, body, and crystallisation control for general food use.

High-DE syrups at 60 to 75 DE deliver higher sweetness and improved hygroscopicity for chewy candy, soft cookies, and moisture-controlled bakery.

High-maltose grades carry maltose at 40 to 70 percent of total saccharides and serve hard candy, brewing, and pharmaceutical syrup applications where slow crystallisation is wanted.

Dry-format spray-dried glucose syrup solids are produced for dry blend, sachet, and instant beverage applications.

Regulatory Status

Complex Starch Sugar is treated as a food ingredient in essentially every regulated market.

It does not carry an E number. Codex standard 212-1999 for sugars and related products covers it in international trade, setting limits on moisture, ash, and sulphur dioxide.

The U.S. FDA recognises glucose syrups and their solids as GRAS under multiple specific regulations.

Allergen status follows the parent starch source. Halal and Kosher certifications are routinely available. Specific dietary positioning such as low FODMAP or organic depends on supplier-level certification.

Manufacturing Process

Complex Starch Sugar is produced by enzymatic hydrolysis of corn, wheat, tapioca, or potato starch.

The starch slurry is liquefied in a jet cooker with thermostable alpha-amylase at 105 to 110 °C. The viscosity drops sharply as the long starch chains are cut into short dextrins.

The liquefied slurry is cooled to saccharification temperature and treated with a tailored enzyme cocktail. Beta-amylase and pullulanase combinations are used for high-maltose products. Glucoamylase produces high-glucose syrups. Controlled blends deliver intermediate saccharide profiles for general syrup grades.

The hydrolysate is filtered, decolorised with activated carbon, and demineralized through cation and anion exchange resins to remove ash, colour, and trace amino acids.

The purified syrup is concentrated under vacuum to the target 75 to 80 percent dry solids and packed into tankers, totes, or drums.
