High Fructose Syrup
High Fructose Syrup is the sugar-industry term for liquid sweeteners produced by enzymatic isomerisation of glucose syrup, with fructose content elevated above the natural inversion ratio of sucrose. The category overlaps in chemistry and origin with High Fructose Corn Syrup (HFCS), and the two terms are often interchangeable depending on regional naming convention.
The two dominant commercial specifications are F42, containing roughly 42 percent fructose with 53 percent glucose, and F55, with about 55 percent fructose and 41 percent glucose. Premium specifications above F55 are produced by chromatographic enrichment for applications requiring higher sweetness intensity.

Common Markets Grades
High Fructose Syrup is graded by fructose content on a dry basis.
The F42 grade matches the sweetness of liquid sucrose at equal solids and is used widely in baking, canning, dairy, and condiment work. F55 is sweeter than sucrose and is the standard for carbonated soft drinks and many sweetened beverages.
F90 enriched grade, with 88 to 90 percent fructose, is produced by chromatographic separation and is used as a sweetness booster or as a blend stock to upgrade F42 streams. Premium specifications above F90 are typically sold as fructose syrup rather than HFS.
All grades are delivered at 76 to 80 percent dry solids in heated tankers or insulated totes to prevent crystallisation. Decolorised, ion-exchanged liquor with low hydroxymethylfurfural content is the standard for beverage applications, where colour and off-flavour sensitivity are highest.

Regulatory Status
High Fructose Syrup is recognised as a sweetener rather than a food additive in most jurisdictions.
In the European Union it falls under the production quota system for isoglucose set by the common agricultural policy until 2017 and is now governed by general sugar legislation, with no E number. Labelling commonly declares it as glucose-fructose syrup or fructose-glucose syrup depending on the dominant component.
The U.S. Food and Drug Administration recognises HFCS as GRAS under 21 CFR 184.1866, with the F42 and F55 grades specified by fructose content. JECFA has not set a numerical intake limit.
Public-health debate around HFS and HFCS has focused on possible links to obesity, NAFLD, and metabolic syndrome. The U.S. FDA and USDA position is that HFS is nutritionally equivalent to sucrose at equal sweetness, while the academic literature remains mixed and most authorities recommend treating it within an overall added-sugar intake budget.
Manufacturing Process
High Fructose Syrup is produced from refined starch through a sequence of enzyme conversions and chromatographic refinement.
Starch slurry is gelatinized and liquefied with thermostable alpha-amylase, then saccharified with glucoamylase to give a dextrose liquor at 95 percent or higher glucose. This stream is decolorised, demineralized, and passed through fixed-bed columns of immobilized glucose isomerase, which converts a portion of the glucose to fructose.
The equilibrium liquor leaving the isomerisation columns contains about 42 percent fructose, the basis of the F42 grade. To reach higher fructose levels, a portion of the F42 stream is enriched on simulated moving-bed chromatography columns operated in calcium form, giving an F90 stream.
F55 is produced by blending F90 back with F42 in the correct ratio. The blended product is given a final polishing, evaporated to 76 to 80 percent dry solids, and shipped in heated transport.
