Imo 500 Syrup
IMO 500 syrup is the standard purity grade of isomalto-oligosaccharide syrup, a starch derived carbohydrate in which enzymatic transglucosylation has converted part of the alpha-1,4 bonds of a maltose syrup into alpha-1,6 bonds. The 500 designation marks the lower of the two common trade purities, carrying roughly half of its dry weight as oligosaccharide, against the refined 900 grade at around 90 percent.
The syrup is a clear, water white to pale yellow liquid at about 75 percent dry substance. Its remaining solids are glucose and maltose, which is why it is sweeter and less viscous than the refined grade and why it behaves in a formulation much like a medium dextrose equivalent glucose syrup. The alpha-1,6 fraction is digested slowly and fermented in the colon, giving partial calorie reduction and prebiotic activity.
In use the syrup is fully miscible with water, stable across the pH range of most foods, resistant to crystallisation and strongly humectant. Those properties place it in binding, moisture control and bulk sweetening roles rather than in applications where a high fibre assay is the point.

Common Markets Grades
IMO 500 is itself a grade designation rather than a product family, defined by an oligosaccharide content of about 50 percent on dry solids and a dry substance near 75 percent. It sits below the IMO 900 syrup and the corresponding spray dried powders in the same range. Buyers distinguish lots mainly on colour, measured as ICUMSA units, on dextrose equivalent, and on the split between isomaltose, panose and higher oligomers.
A dried version of the same composition is available where a liquid cannot be handled, produced by spray drying the syrup with a carrier. Some producers also supply an elongated chain variant of the 500 grade in which a longer enzymatic step raises the share of oligosaccharides with three or more glucose units without changing the total oligosaccharide figure.

Regulatory Status
In the United States isomalto-oligosaccharide syrup relies on generally recognised as safe status established by notification to the Food and Drug Administration, which responded without objection. It is not among the isolated carbohydrates the agency accepts for the dietary fibre declaration, so on a United States label the syrup contributes to total carbohydrate and sugars rather than to fibre.
In the European Union the material is not a food additive and carries no E number. Its marketing is governed by the novel food framework and depends on the authorisation covering the specific preparation. Authorities in Australia and New Zealand have assessed isomalto-oligosaccharide through their novel food process. No Codex commodity standard and no JECFA additive specification apply to the syrup.
Manufacturing Process
The syrup is produced from a starch slurry, most often maize starch. The slurry is jet cooked and liquefied with a thermostable alpha-amylase, then saccharified with beta-amylase and pullulanase to a high maltose syrup. Alpha-transglucosidase is then added, and it transfers glucose residues onto the six position of acceptor sugars, generating the isomaltose, panose and isomaltotriose that define the product. Because the 500 grade is not chromatographically refined, the reaction is stopped at the point where the oligosaccharide share reaches about half of dry solids.
The liquor is heat treated to inactivate the enzymes, filtered to remove protein and insolubles, decolourised over granular or powdered activated carbon and demineralised through cation and anion exchange resin beds. It is then concentrated in a multiple effect vacuum evaporator to the target dry substance, polished through a final filter and filled hot into drums or road tankers. Skipping the chromatographic step is what separates this grade from the refined 900 syrup made on the same line.
