Magnesium Gluconate is the magnesium salt of gluconic acid, with the formula Mg(C₆H₁₁O₇)₂ and a molar mass of 414.50 g/mol for the anhydrous form. It is a fine white to off-white crystalline powder with a faint, neutral taste and good water solubility.
The compound is the gentlest organic magnesium salt in routine commercial use. It combines acceptable bioavailability with very low gastrointestinal irritation, which is why it is the magnesium form most often reached for in pediatric, geriatric, and clinical-nutrition contexts, and the form preferred for dairy and infant formula fortification.

Magnesium Gluconate is graded by hydration state, particle size, and pharmacopoeial conformance.
The dihydrate is the most common commercial hydration form, with the formula Mg(C₆H₁₁O₇)₂·2H₂O and an elemental magnesium content of about 5.4 percent. An anhydrous form is also offered with a content of approximately 5.9 percent.
USP and Ph. Eur. pharmaceutical grades are the standard for oral supplements, infant formula, and parenteral solutions, with strict limits on reducing sugars, free gluconic acid, chloride, sulphate, and heavy metals.
Fine powder grades, with 95 percent of particles below 100 µm, are formulated for capsules, tablets, and beverage stick packs.
Granular grades, in the 200 to 600 µm band, are formulated for direct compression and for blends where uniform flow into high-speed tablet presses is required.

Magnesium Gluconate is approved for food, supplement, and pharmaceutical use in essentially every regulated market.
In the European Union it carries the additive number E580. It is also listed on Annex II of Regulation (EU) 1170/2009 as a permitted magnesium source in food supplements and on Annex III of Regulation (EU) 609/2013 for foods intended for specific groups, including infant and follow-on formulas.
The U.S. Food and Drug Administration recognises the substance as GRAS for use as a nutrient under 21 CFR 184.1452, with specific provision for infant-formula fortification.
JECFA has reviewed magnesium salts as a group and assigned them acceptable status for use as food additives.
Pharmacopoeial monographs appear in the United States Pharmacopeia (USP), the European Pharmacopoeia (Ph. Eur.), and the Japanese Pharmacopoeia (JP). Halal and Kosher certifications are routine.
Manufacturing Process
Magnesium Gluconate is produced by neutralisation of gluconic acid with a magnesium source.
Gluconic acid is itself a fermentation product, sourced from Aspergillus niger cultivated on glucose syrup. Submerged aerobic fermentation oxidises the C1 aldehyde of glucose to the carboxylic acid, after which the broth is filtered, concentrated, and sold as a 50 percent aqueous solution.
The acid stream is then neutralised with high-purity magnesium oxide, magnesium hydroxide, or magnesium carbonate at a 1:2 metal-to-acid stoichiometry. The reaction is exothermic and proceeds smoothly to a clear, colourless solution.
The solution is filtered to remove insoluble carryover, decolorised through activated carbon, and crystallised by controlled cooling. The dihydrate crystallises preferentially under most operating conditions.
Crystals are washed, centrifuged, and dried in fluid-bed or vacuum dryers at temperatures below 60 °C to preserve the dihydrate structure. The dried product is milled to specification and packed under controlled humidity.
