Polydextrose
Polydextrose is a randomly bonded soluble fibre polymer of glucose, with sorbitol end groups and citric acid linkage residues.
It carries the E number E1200 and is produced by the high-temperature polymerisation of glucose, sorbitol, and a trace of citric acid catalyst under reduced pressure.
The white powder dissolves in water to give clear, low-viscosity solutions of neutral taste, which is why it is the soluble fibre of choice in clear beverages, dairy desserts, baked goods, and sugar-free confectionery.

Common Markets Grades
Two physical forms of polydextrose are traded: a free-flowing white powder and a 70 percent solids syrup.
Type I is the original polymer, slightly acidic in solution, and carries trace citric acid character.
Type II is neutralised with potassium hydroxide to a near-neutral pH and is preferred where the residual acidity of Type I would interact with the food matrix.
Type III is the partially decolorised neutral grade for premium beverage and clear formulation use.
Type IV is hydrogenated polydextrose with reduced colour and improved bland flavour for high-end applications.

Regulatory Status
Polydextrose carries the European E number E1200 and is approved for use in foods generally in the European Union, with technical limits in specific categories.
The U.S. FDA recognises it under 21 CFR 172.841 and confirmed in 2018 that polydextrose qualifies as a dietary fibre under the revised Nutrition Facts panel.
JECFA reviewed polydextrose and concluded no specified ADI was required.
Codex Alimentarius lists it as a permitted bulking agent and stabiliser.
Manufacturing Process
Polydextrose is produced by melt polymerisation of glucose, sorbitol, and citric acid.
The dry ingredients are mixed in a typical ratio of 89:10:1 (glucose:sorbitol:citric acid) and heated to around 160 degrees Celsius under partial vacuum to drive off the water generated by the polymerisation.
The molten polymer forms a glassy mass that is dissolved in water, decolorised with activated carbon, and demineralized by ion exchange.
For Type II and above, the solution is neutralised with potassium hydroxide.
For Type IV, the solution is hydrogenated over a nickel catalyst to reduce the residual carbonyl content.
The purified solution is spray-dried into the final powder.
