Gardenia Red
Gardenia Red is a natural red colourant produced by enzymatic conversion of the iridoid glycoside geniposide, extracted from the fruit of Gardenia jasminoides, in the presence of selected primary amino acids.
The pigment family sits alongside Gardenia Blue, Gardenia Yellow, and Gardenia Green as part of the broader gardenia colour portfolio. All four are produced from the same fruit feedstock but differ in the post-extraction processing route.
Gardenia Red is water-soluble, stable across a wide pH range, and gives a clean strawberry to deep crimson hue depending on dose and matrix pH.

Gardenia Red is graded by colour value, expressed as E10%/1cm at the absorption maximum near 530 nm.
The standard liquid concentrate is graded at colour values of 80, 120, and 200, dissolved in a glycerol or propylene-glycol carrier with an organic-acid pH buffer.
Spray-dried powder grades sit at colour values of 100, 200, and 400, carried on maltodextrin and standardised for moisture below 6 percent. The 400-grade is the standard for confectionery and dry-mix dosing.
A high-purity preparative grade with the pigment fraction above 50 percent on a dry basis is produced for analytical reference, for the development of new co-pigmentation systems, and for cosmetic master-batch preparation where minimum carrier load is preferred.

Regulatory Status
Gardenia Red is listed in Japan's List of Existing Food Additives as a natural colour of long-established use, where the gardenia-derived colour family has decades of food-industry deployment.
In South Korea it is permitted as a natural food colour under the Korean Food Additives Code with no quantitative restriction beyond good manufacturing practice.
It is not currently listed as an authorised food colour in the European Union under the E-number system, and in the United States it has no separate FDA colour-additive listing. Use in those markets is generally confined to cosmetic applications, dietary supplements under self-affirmed determinations where applicable, or to colouring-foodstuff routes that bring the gardenia extract in as a botanical concentrate.
The substance is widely accepted in Halal and Kosher schemes, and the parent fruit, Gardeniae Fructus, is monographed in the Chinese, Japanese, and Korean herbal pharmacopoeias.
Manufacturing Process
Production starts with the dried mature fruit of Gardenia jasminoides, cultivated across Jiangxi, Fujian, and Sichuan provinces. The fruit is rich in geniposide, an iridoid glycoside that serves as the universal starting material for the whole gardenia colour family.
For the red route, geniposide is first hydrolysed enzymatically to genipin by a beta-glucosidase preparation. The reactive genipin aglycone is then incubated with a selected primary amino acid such as glycine, lysine, or taurine at controlled pH and temperature, where it undergoes a dimerization and cyclization cascade that builds the conjugated red chromophore.
The choice of amino acid, oxygen availability, and reaction time directs the conversion away from the more familiar blue pigment and toward the red end of the visible spectrum. The crude reaction mass is clarified, decolorised of residual yellow precursors on adsorbent resin, and concentrated under vacuum.
The concentrate is either standardised as a liquid colour or spray-dried on a maltodextrin carrier. The same enzymatic platform is run separately to produce the blue, yellow, and green members of the gardenia colour family from the same fruit harvest.
