Ginger Oleoresin
Ginger Oleoresin is the concentrated, semi-solid extract obtained by solvent extraction of dried Zingiber officinale rhizome. It contains both the volatile essential oil and the non-volatile pungent principles of ginger in a single matrix.
The product is a dark amber to deep brown viscous liquid with a strongly aromatic and pungent character. One kilogram of oleoresin can replace 25 to 35 kilograms of dried ginger powder on a flavour-equivalent basis, depending on the grade.

Common Markets Grades
Ginger oleoresin is specified by volatile-oil content and gingerol assay.
The standard food-flavour grade carries 18 to 25 percent volatile oil and a refractive index in the 1.488 to 1.498 range. This grade balances aroma and pungency for general food use.
High-pungency grades are produced with longer extraction times and finer raw material grinds, pushing gingerol content above 25 percent. These grades are sold to beverage and confectionery formulators who want pungent impact without the woody volatile note.
Decolorised grades are processed through a polishing step to lighten the colour for clear-beverage use. The trade-off is some loss of aroma top notes.
Dispersion-ready grades are pre-emulsified or sold as plated powders on a carrier such as maltodextrin, gum acacia, or silicon dioxide. These formats simplify dosing in dry blends and instant beverage powders.

Regulatory Status
Ginger oleoresin is regulated as a flavouring substance rather than a food additive.
The U.S. FDA lists it under 21 CFR 182.20 as a natural flavouring substance generally recognized as safe. The Flavour and Extract Manufacturers Association of the United States (FEMA) assigned it FEMA 2522.
The Council of Europe and the European Flavouring Industry treat ginger oleoresin as a natural flavouring complex obtained from a botanical source, with use covered under EU flavouring regulation 1334/2008. No E number applies.
JECFA has reviewed ginger and ginger-derived flavouring substances and concluded no safety concern at current use levels. Residual solvent specifications follow ICH Q3C and the European Pharmacopoeia general chapter on residual solvents.
Pharmacopoeial monographs for ginger extract appear in the United States Pharmacopeia and the European Pharmacopoeia, both of which specify minimum gingerol content for pharmaceutical-grade material.
Manufacturing Process
Dried ginger rhizome is milled to a coarse grind that maximises solvent contact while keeping bed permeability suitable for percolation. The grind size is a key process parameter because finer material extracts faster but channels less evenly.
Extraction is carried out in stainless-steel percolators using food-grade solvents. Acetone, ethanol, isopropanol, and ethyl acetate are all used in industrial practice, sometimes in sequence to capture different polarity fractions. Supercritical CO2 extraction is used as a premium clean-label route, particularly for high-gingerol grades destined for nutraceutical use.
The crude extract is filtered and concentrated by vacuum distillation. Residual solvent is stripped under reduced pressure to bring levels below regulatory limits. The resulting oleoresin is standardised by blending lots, often with a small addition of recovered ginger essential oil to hit the target volatile-oil specification.
Quality control includes gas chromatography for volatile-oil composition, high-performance liquid chromatography for gingerol assay, residual solvent analysis, and microbiological testing.
