Monk Fruit Juice Concentrate is a clarified and concentrated aqueous extract of Siraitia grosvenorii fruit, sold as a viscous brown to amber liquid at 40 to 60 brix.

The concentrate carries the native mogroside fraction of the fruit together with naturally occurring fructose, glucose, organic acids, and colour compounds. It functions as both a sweetener and a flavour and colour base in finished products.

Standard commercial cuts run at 40, 50, 55, and 60 brix. The 60 brix grade is preferred for shelf-stable storage and shipping, while 40 to 50 brix is used where lower viscosity is required.

Mogroside V content is typically declared as a percentage of total solids and ranges from roughly 0.5 to 2 percent depending on the source fruit and the processing route.

Regulatory Status

Monk Fruit Juice Concentrate is regulated as a fruit-derived ingredient and, when standardised to defined mogroside V levels, as a sweetener.

In the United States, monk fruit extracts including juice concentrates are recognised under multiple GRAS notices submitted to the Food and Drug Administration. In the European Union, monk fruit extract is authorised under E968, while less-purified juice concentrates may be marketed as a novel food ingredient depending on the use context.

JECFA evaluated Siraitia grosvenorii extracts and concluded that an ADI was not required at typical use levels.

Kosher and Halal certifications are routinely available. Organic-certified juice concentrate is produced when sourced from certified organic fruit and processed under approved organic processing aids.

Manufacturing Process

Production starts with fresh or dried monk fruit, sourced primarily from the karst-mountain growing region around Guilin in southern China.

Fresh fruit is washed, pulped, and pressed to release juice. Dried fruit is broken open and extracted with hot water in counter-current extractors. The crude juice is screened and centrifuged to remove pulp and seeds.

Light decolorisation over activated carbon softens the deep brown colour and removes off notes from the fruit shell, while preserving the natural sweetness and the characteristic mogroside profile. Some processors omit decolorisation to retain a fuller flavour and colour for traditional applications.

The clarified juice is concentrated under vacuum at low temperature to protect heat-sensitive flavour and colour compounds. The concentrate is pasteurised, optionally aseptically filled, and packed in drums, totes, or aseptic bag-in-box containers.
